Pav Bhaji


When I was in Hyderabad, I used to eat lots and lots of chat. In all of them, my most favorite is Pav Bhaji. Wooooww just by writing the name itself, I get water into my mouth and now can smell the flavor of that. So here comes the recipe.


Ingredients:
  • Medium boiled potatoes 6 nos.
  • Peas ½ cup
  • Capsicum chopped 1 cup
  • Carrots chopped ½ cup
  • Cabbage chopped ½ cup
  • Tomatoes chopped 2 cups
  • Onions chopped ¾ cup
  • Ginger-garlic paste 1 tbsp.
  • Red chili powder 1 tsp.
  • Lemon Juice (as per your taste)
  • Chopped green coriander 1 tsp.
  • Pav Bhaji Masala 1½ tbsp.
  • Salt To taste
  • Pav (a kind of bread)
Method:
  • Boil all the vegetables. Mash coarsely
  • Heat oil and butter in a pan together.
  • To it add the onions. Once the onions are brown, add the ginger-garlic paste.
  • Add the pav-bhaji masala, red chili powder and tomatoes. Stir constantly. Cook it for 5-10 mins.
  • Once cooked add the coarsely ground vegetables. Fry for sometime. Put salt and water. Mix and let it cook.
  • Split the pav from the center. Take butter in a pan. Heat the pav in the pan.
  • Garnish the bhaji with coriander leaves and add lemon juice.
  • Serve bhaji hot with pav.

30mins for Preparation

Serves: 4

Note:
To get a spicy pav flavor, Sprinkle little red chili powder on the pav after they get heated up.

Chinese Egg Fried Rice

Whenever we try to remember about the Chinese food, we first take the name of chinese fried rice. So here I'm bringing you this recipe which by seeing gets water into your mouth. This is a very simple recipe to cook. So enjoiiiiiiiiiiii...........




Ingredients:
  • cold rice - Cooked and freezed
  • 4tsps Oyster Sauce
  • 2tsps Soya Sause
  • 2 Eggs
  • Vegetable Oil
  • 1cup Carrots
  • 1cup Spring onions
  • 1/2cup Beans
  • 1/2cup Peas
  • Pinch of Aginamotto/Chineese Salt
  • Salt (as per taste)
  • 1Tsp Pepper
Method
  • Take a pan and fry eggs. Keep it aside.
  • Take pan and add oil. Once oil is heated add spring onions and fry them.
  • After they are fried till light brown, add carrots, beans and fry a little. Then add a very little water(for about 1/4th cup). Once they are half cooked add the peas and aginamotto.
  • Now add soya sause and oyster sause, salt nd pepper and mix well. At this point, u can smell the aroma of the mix.
  • Once water gets drained add fried egg nd cook for 2mins.
  • Now add the cold rice to the cooked vegetables. Keep it on sim until the flavors mix.

Preparation Time:
30mins

Serves: 2

Note:
Rice is freezed because the cold rice when made hot and chewed it does not stick in mouth which makes it perfect rice for any type of fried rice.
Can be served with tomato ketchup or raita.

Dahi Aloo


Hmmmmmmmmmmmmmmm Yummy..................................................
Dahi Aloo curry is a special curry where you get a great spicy taste. It can be served with rotis, parathas or even rice. It can be cooked easily and even when you don't have much time to cook, this is the best tasty recipe you will ever cook.


Ingredients:
  • 3 potatoes -pealed , cut into small cubes and cooked nicely
  • 1 tsp Red Chilli Powder
  • 1/2 tsp Coriander Powder
  • 1/4 tsp. Turmeric Powder
  • 1/4 tsp. Garam Masala
  • 1/2 tsp. Ginger- Garlic paste
  • 1 tsp Cumin Seeds
  • 1 tsp Mustard seeds
  • 2 green chillies slit
  • Pinch of asafoetida
  • Curry Leaves
  • coriander leaves finely chopped
  • 1 cup curd/yogurt beaten
  • 1 1/4 cup water
  • 1/4 tsp. wheat flour
  • 1 tbsp. oil
  • Salt as per taste
Method
  • Take a pan. Heat oil. Add cumin and mustard seeds and when they splutter, add ginger-garlic, green chilies and curry leaves.
  • Mix all the dry masala ingredients, wheat flour in about 1/4 cup water and add it to the above and fry for few 2 more mins.
  • Add beaten curd and fry for 5 minutes or till the curd loses its whiteness. Tip:Stir continuously after adding curd.
  • Add the remaining water and the cooked cubed potatoes and stir slowly mashing them.
  • Cook on low flame and let it sit for about 10 mins until the gravy thickens.
  • After it is cooked, add salt and keep for 2mins.
  • Enjoy with rice or chapathis.

Note:
You can add "amchur" as a flavor.

Methi Parathas

There are many types of parathas like aloo paratha, methi paratha, lacha paratha, plain paratha, etc. And these are made very easily with a very high nutritious value. Moreover you can add your favorite flavors. So I like to introduce you to the recipe "Methi Paratha".....






Ingredients
  • 3 cups of whole wheat flour
  • 1 bunch of methi washed and chopped into small pieces
  • 1 medium sized onion chopped into very small pieces
  • 1 tsp jeera/Cumin seeds
  • 1 tsp turmeric powder
  • 1 tsp of chili powder
  • 1 tsp of coriander powder
  • 1 tsp of olive oil
  • 1 tsp salt

Method

  • Take a thava/pan, put oil season jeera until it starts sputtering
  • Add onions and fry until translucent
  • Then add all the remaining masala powders and fry for ½ minute
  • Now add the chopped methi leaves and fry for another minute
  • For the above mixture add the wheat flour and make dough adding water only if required.
  • Keep aside for 30mins with a lid covered.
  • Then roll the parathas as thin as possible and roast on both sides on thava until u see small brown spots and smear some ghee/oil if desired.
Preparation Time:
10mins for mixture
30mins for dough
10mins to prepare parathas

Note:
Dough is to be made not so soft not so hard then you get parathas very soft and thin.
Can be served with any curry or ketchup or even curd(yorgurt/dahi).
